Won Ton Soup...

I made Won Ton Soup a few weeks ago.
When I was uploading photos from my camera I came across this one of the ingredients...ground pork, shrimp, green onion, ginger, bok choy...
I had forgotten that I had taken the picture.
The Won Tons turned out great! The flavor of the pork filling was so tasty. There was that nice ginger/onion flavor that I hope for when I order Chinese dumplings. I think I will leave them out of the soup next time and just steam them. They became soggy in the broth. The left overs the next day had become rather gelatinous...not appetizing!
But, I guess that is what cooking is all about trial and error and learning from the not so successful attempts...this one was partly successful, I will definitly make these again, just in a different way.

A little Valentine's re-cap...

Elijah and I made Valentine cards last week...on Valentine's Day.
So we were a little late getting them to their recipients.
I just wasn't inspired to make them until the actual day.
Elijah colored the white cardstock that I then cut into small cards. Next, I cut out and glued fabrics hearts onto them.
The cards were mailed and should be with their intended by now.
I can't wait to keep doing crafts with my babies...what fun it is.

Ooooo, Look...

I am in love with this little kit!
I had been given a gift certificate to a fun gift store by my co-workers alomost a year ago.
I finally went and spent it.
This is one of the things I got.
It's full of cup-cake liners, a cookbook, piping bag and tips.
But, look at the liners...polka dots! (I'm partial to the stripy ones too!
Truely divine in my book.

I made these envelopes last week.
I was inspired by this post at The Small Object. She made these quite awhile ago and I wanted to do the same. I used pages from a Better Homes and Gardens gardening book from the 50's. I folded and glued them and then attached a label for each month of the year. I then cut a notch at the top using a circle punch. I plan on putting our monthly receipts into them.
Just a little organization that I think happens to look fabulous too.

Where did it go?

Elijah turned 2 on Wednesday.
Where did the last two years go?
He has changed my life in so many ways. It is as if he has always been here or at least that I always knew that it would be him, that I would have Elijah Lee as my son.
I pray for him daily, that he will continue to grow into a godly man.
Here is a collage of pictures of our dear sweet boy from the last two years.
I'm going to go give him a squeeze and a kiss...

How she got her name...

David was certain we would be having a second boy.
No, we did not find out the sex...we're some of those crazy people that like to drive everyone nuts by not finding out what their having. David just knew it was a boy.
So certain in fact, that he told me I could name the baby whatever I wanted if it was a girl.
I agreed.
I thought for many months, trying out different names in my head. I settled on two possibilities, but wanted to wait until the baby was born to decide, if it was indeed a girl.
As soon as I saw her I knew...Evelyn. I had settled on Evelyn Hope, but David asked if we could switch Hope to Espernza, which means hope in Spanish...I agreed, and the name suits her perfectly.
Evelyn means "Light" which I love, but also David did a search soon after she was born and found that in French it also means "Little Bird." I had taken to calling the baby Little Bird even before she was born. Again, it's the perfect name. I love it when things like that happen. It's like a little present from God.

Evelyn is a miracle baby.
I was about 12 weeks along when I went in for a routine checkup. We found out during the ultrasound that the baby had what a cyst in its abdomen. I was referred to a high risk specialist, had several extra ultra sounds and an MRI. David and I also met with a pediatric surgeon. Everything was unknown as to what the structure might be and what it might be effecting in the baby's body. We made plans for what we might need to do when the baby was born and I tried not to worry too much. I prayed...a lot.
In July I had another ultrasound to check on things and the structure was gone...completely. I cried, it was such an answer to prayer. The specialist wanted me to come back one last time in a month just to check and make sure that things still looked fine. I forgot my appointment and had to re-reschedule for one week later. That was when we saw that the placenta was failing. I believe that all happened for a reason. Maybe the failure wouldn't have been caught as early otherwise.
I was induced that afternoon and three days later Evelyn was born.
She was and is a miracle.

The New and the Different...

I thought I would dust off my creative writing and try my hand at poetry again. The skeleton for this was created this morning as I drove through the frozen Midwest landscape. The line breaks are all where they are for a reason, to create pause and different possibilities in meaning.

David was let go from his job this week. We are thrust into another state of transition. Scripture is always a balm for times like these:
"For I know the plans I have for you, says the Lord, plans to prosper you and not to harm you. Plans to give you hope and a future." Jeremiah 29:11
I imagine we are in a very long windowless hallway, full of doors. We are at the beginning and will try each one in turn until one opens. I have a heady dose of excitement mixed with apprehension going through my veins.
So we wait.

A little Winter knitting...

I have been working on a bit of knitting lately. My first sweater. I do knit throughout the year, but, what is it about winter that lending itself to knitting? It makes the long cold evenings a little warmer don't you think?
I am using a lovely purple merino wool from Peru...wooly goodness indeed.

Lovely Day...

Today is my birthday...
So far it has been lovely.

David gave me this wonderful stack of books...

I made scones from The Art of Simple Food...goodess, truely.
He also gave me this coffee press.
I have wanted one for quite awhile now.
I felt very European this morning as I sipped my coffee...

The older I get, the less I feel like an adult. I feel like I should still be only about 10 years old, which is great for having little children...I like playing with the play dough, fake food and play dishes just as much as Elijah does.
I have always enjoyed having a February birthday. There has never been any pressure to do anything big or take trip somehwere. I like quiet and small for my birthday, staying indoors, surrounded by loved ones, doing my favorite things...simple things. It is no surprise that I am a homebody. I do love to travel and see the world, but, it is always nice to come home. So that must be why I love a winter birthday, I get to be home, I get to be comfortable and cozy.
Today also happens to be the Super Bowl...and being Steelers fans in this house, it is also a big day for that reason. It's another nice way to spend the day...watching the Steelers win their sixth title...:)
